Eat Pretty: Ultimate WHF lunch
This bowl is delicious and takes maybe 5 minutes. I recommend cooking some wild rice at the beginning of the week to have on hand for meals like this. This bowl is packed with hydrating ingredients that are rich in minerals and antioxidants. I love including Kimchi in this for a happy and healthy gut. Ingredients:
1/3 cup cooked wild rice (cooked in bone broth for a collagen boost)
1/2 cucumber, sliced
Generous handful of arugula
Small handful of microgreens
1 TBSP dill
1 TBSP pepitas
2 generous spoonfuls of Kimchi
Directions:
Start with 1/3 cup of cooked wild rice, broil it until it is warm, usually about 2 min. Place it in a bowl. Massage arugula and micro greens with olive oil, toss them in. Slice cucumber and add to bowl. Add a tablespoon each of dill and pipitas for flavor and healthy fats. Top it with two spoonfuls of kimchi. Drizzle with olive oil (I like to use Graza). Season with salt and pepper. A perfect quick option for your work-from-home lunch. Enjoy!
