Eat Pretty: Hormone Balancing Salad
Food is medicine. Especially when you eat like this. I’ve found myself gravitating towards meal-prepping lately as we have been in major flow state when it comes to working from home. Being able to grab this out of the fridge has made my life easier.
This salad supports hormone balance, liver detoxification, and also nourishes your gut bacteria. If you’re concerned about raw cruciferous for your thyroid, massaging with lemon juice will help breakdown the goitrogens. However, you can try steaming the kale, Brussel sprouts and cabbage for 5 minutes after shredding them.
Ingredients:
1 bunch Lacinato Kale
1/2 lb Brussels Sprouts
1/2 large Purple Cabbage
1/3 cup chopped Parsley
1/4 cup Pumpkin Seeds
1 Avocado
Dressing:
3 tbsp Avocado Oil
2 tbsp Apple Cider Vinegar
1 Lemon, juiced
1 tsp minced Garlic
2 tsp Dijon Mustard
1/2 - 1 tbsp Honey
1/2 tsp Salt
Directions
Finely slice the kale, Brussels sprouts, and cabbage. A mandolin is ideal here, or a sharp knife will do the job. Kale will need to be sliced with a knife. Combine all the dressing ingredients in a jar. Shake until emulsified. Pour over salad. Massage it gently with clean hands until the kale embraces the softness. Don't skip this step! Add parsley, pumpkin seeds, and avocado. Optional: add your protein of choice. I like adding chicken to this personally. Enjoy! Stores well in fridge for up to 3 days.
